Sweet Buttermilk Cornbread

Ingredients
(6 portions)
1 cup cornmeal
1 cup all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 large egg
4 tablespoons melted butter
1/2 cup buttermilk
1 cup 7-Up (lemon-lime soda)
1 teaspoon baking soda pinch of cajun seasoning

Technique:

1. Combine dry ingredients in medium mixing bowl.
2. Add liquid ingredients (reserve a couple teaspoons of the melted butter to brush on top of finished bread) one at a time and mix with wire whisk until thoroughly combined.
3. Grease medium cast iron skillet generously with butter and pour in batter. Bake in 350° oven until top is golden brown and toothpick inserted comes out clean.
4. Use remaining melted butter to brush generously
over top of finished cornbread. Serve warm and store cooled leftovers in airtight container!
